Prep time: 20 mins | Difficulty: Easy | Servings: 4
Ingredients:
1 tbsp olive oil
1 medium shallot (finely chopped)
2 garlic cloves (minced)
1/4 tsp red chili flakes
75 ml vegetable broth or fish stock (with a squeeze of lemon juice)
2 tbsp tomato paste
1 tsp Italian seasoning
200 ml water
100 g fresh spinach
180 g cream cheese
500 g gnocchi
225 g hot smoked salmon (flaked)
Salt & black pepper (to taste)
Fresh parsley (chopped, for garnish)
How to Make:
Sauté Aromatics: Heat olive oil in a skillet over medium heat. Sauté chopped shallot for 1–2 minutes, then add garlic and red chili flakes. Cook for 1 minute until fragrant. Add vegetable broth and let it reduce slightly.
Build the Base: Add tomato paste and Italian seasoning. Pour in water, stir well, and bring to a gentle simmer.
Wilt Spinach: Stir in the fresh spinach and simmer for 2–3 minutes until wilted.
Make it Creamy: Add cream cheese to the skillet and stir continuously until completely melted and smooth.
Combine: Add the cooked gnocchi and flaked hot-smoked salmon into the creamy sauce.
Mix Gently: Gently stir everything together to coat the gnocchi without breaking up the salmon too much.
Season & Serve: Season with salt and black pepper to taste. Garnish with freshly chopped parsley and serve immediately for the creamiest texture!
