Serves: 6 | Prep time: 20 mins | Cook time: 2 hours
Ingredients:
2 lbs beef chuck, cubed
1 ½ lbs baby potatoes
3 carrots, sliced
1 large onion, chopped
4 garlic cloves, minced
4 cups beef broth
2 tbsp tomato paste
2 tbsp all-purpose flour
2 tbsp olive oil
1 tsp dried thyme
Salt & black pepper to taste
Instructions:
Sear the Beef: Heat olive oil in a large pot over medium-high heat. Brown the cubed beef until well seared on all sides. Remove beef and set aside.
Sauté Aromatics: In the same pot, sauté the chopped onion and minced garlic until fragrant.
Build the Sauce: Stir in the flour, then add beef broth, tomato paste, dried thyme, salt, and black pepper. Return the seared beef to the pot.
Add Veggies: Add the baby potatoes and sliced carrots. Bring the pot to a simmer.
Slow Simmer: Cover and cook on low heat for about 2 hours, until the beef becomes fork-tender and the flavors are rich and deeply infused.
Serve: Ladle into warm bowls and serve with crusty bread, followed by a hot espresso
